Korean-Style Mussels on Crostini
from Anju Restaurant & Lounge

4 pounds mussels
2 tablespoons olive oil
1 tablespoon sesame oil
1 shallot, minced
1 head black garlic, peeled and minced
1 serrano pepper, sliced thin
4 tablespoons ginger, peeled and minced
1/2 cup dry white wine
4 tablespoons soy sauce
4 tablespoons sugar
4 tablespoons unsalted butter
sesame seeds
sliced green onion

Rinse the mussels under cold running water and remove beards using a cloth. Discard any with broken shells. Heat oil in a 6 to 8-quart stockpot. Saute the shallot, black garlic, ginger, serrano to create a base flavor. Add the mussels and sugar and give them a good toss. Deglaze with wine and soy sauce. Cover the pot and steam over medium-high for 4 minutes until the mussels open. Add butter, recover the pot, and steam for another minute to melt the butter. Give the mussels another good toss. Distribute mussels and sauce evenly into 4 seperate bowls. Garnish w/ sesame seeds and serve with plenty of grilled garlic bread or rice to sop up the broth.
